Healthy Super Bowl Snacks

The Super Bowl is just around the corner! Can you believe it? If you celebrate “the big game” the right way, your party will have a TON of food. Usually, there’s a variety of pizzas, wings, chips with an assortment of dips, and at least three or four different desserts. The urge to snack on all these delicious foods is quite tempting. Here are some recipes you can use to replace those grease-filled foods with something you won’t regret the next day.

Buffalo Chicken Bites

These little bites will make 10 servings and a serving size is 3 pieces. Want to know the best part? Each serving size is only 126 calories! Feel free to snack away and not feel guilty! (via Eat Yourself Skinny)

Here’s what you will need:

3 cups shredded cooked chicken

1/3 cup of your favorite hot sauce (We recommend Frank’s Hot Wing Sauce)

3 1/2 oz. fat-free cream cheese, softened

1 cup shredded cheddar cheese

1/4 cup green onions, chopped

1/2 cup all-purpose flour

2 eggs, lightly beaten

3 cups Corn Flakes cereal, crushed

First, preheat your oven to 350 degrees Fahrenheit. In a large bowl, combine shredded chicken, hot sauce, and cream cheese. Once everything is combined, add in cheddar cheese and green onions. Set this bowl aside. Grab 3 new bowls and in each bowl put flour, eggs, and crushed cereal. Scoop out the chicken mixture and make 1 ½ inch-balls. First, roll them in the flour, then dip in the eggs, cover them with the crushed cereal, then place them on a non-stick baking sheet. Place them in the oven for 20 – 25 minutes or until golden. Blue cheese and ranch dressing would each make great pairings for these tasty snacks, and you can even substitute for a lite variety to cut down on calories!

Baked Sweet and Spicy Wings

These wings are the perfect balance of sweet and spicy! This recipe will make 8 servings, and a serving size is 3-4 wings. Each serving size contains 303 calories, plus 21g of protein! These wings are sure to fix your urge and leave you feeling guilt-free. (via Slender Kitchen)

Here’s what you’ll need:

2 tbsp. whole wheat flour

1 tsp salt

1/2 tsp pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp paprika

2lbs chicken wings

2 1/2 tbsp. buffalo hot sauce

1 tbsp. unsalted butter, melted

2 tbsp. hot pepper jelly, melted

After you’ve gather all your ingredients, preheat the oven to 500 degrees Fahrenheit. In a medium to large bowl mix together flour, salt, pepper, garlic powder, onion powder, and paprika. Toss the wings into the mixture and place them on a baking sheet. Make sure your baking sheet is covered with foil AND sprayed with cooking spray – these guys like to stick and make a mess! Cook for 25 minutes, flip, then another 25 minutes for a total of 50 minutes bake time. While those are baking, melt the butter and hot pepper jelly in the microwave for 30 seconds. Add in the buffalo sauce and stir. Take the baked wings and toss them in the sauce and serve! If you have any extra sauce, place it on the side for dipping.

Mozzarella Bites

We were so excited to find this healthy recipe for mozzarella bites! Not only is this recipe healthier than the fried version from your favorite restaurant, but it only takes about 15 minutes from start to finish! Plus, 3 bites of these guys (one serving size) is 101 calories. Can this recipe get any better?! (via Skinny Mom)

Here’s what you’ll need:

1/3 cup herb-flavored panko breadcrumbs

3 light string cheese sticks

2 eggs whites

1/3 cup reduced-sodium marinara sauce

Start off by preheating your oven to 425 degrees Fahrenheit. Take a medium skillet and place it on the stove over medium heat. Add in the panko breadcrumbs and cook for about 2 minutes or until toasted. Be sure to stir the whole time as you don’t want any to burn. Once breadcrumbs are toasted, place them in a shallow bowl. In a separate bowl add in your egg whites and cut mozzarella sticks into 1-inch pieces. Dip the mozzarella pieces into the egg whites then roll in the breadcrumbs. Place the mozzarella bites on a baking sheet coated with nonstick cooking spray. Bake for 3 minutes or until the cheese is softened and heated (without losing too much shape). Warm the marinara sauce in the microwave for one  minute or until desired temperature, then dig in!

Queso Dip

Every Super Bowl party MUST have a dip! Make sure you have your chips ready and get to this dip while it’s hot and before it’s all gone. This recipe makes 16 servings and a single serving is ¼ of a cup. One serving only has 75 calories, so snack away, friends! (via Slender Kitchen)

Here’s what you’ll need:

1 onion, chopped

3 garlic cloves, minced

1 poblano pepper, diced

1/2 cup low sodium chicken broth

1 1/4 cup skim milk, divided use

3 tbsp. cornstarch

10 oz. can diced tomatoes with green chilies, drained

1 3/4 cup reduced fat shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1 tsp lime juice

1 tsp salt

1/4 tsp black pepper

1/2 tsp ground cumin

1 tsp ancho chili powder

Preheat the oven to 400 degrees Fahrenheit. In a small bowl whisk together ¼ cup milk and cornstarch. Set this mixture aside as it will be used later as a thickener. Spray a medium to large sauce pan with non-fat cooking spray and place over medium heat. Combine onions, garlic, and poblano pepper, and cook for 5-7 minutes until soft, then add in chicken broth and remaining milk. Bring to a simmer and let cook for 3 minutes and reduce slightly. Add in cornstarch mixture and stir quickly. The mixture will immediately thicken up and begin to bubble. Once the mixture thickens up, reduce the heat to low. Mix in cheese and stir until it is completely melted. Then, combine with tomatoes, cilantro, lime juice, chili powder, cumin, salt, and pepper. You are ready to eat! To serve with homemade tortilla chips cut corn tortillas into ¼’s and place on parchment paper. Spray with cookie spray and a dash of salt. Cook for 10 – 15 minutes or until crispy. Enjoy!
